Ingredients

  • Meatballs:
  • 1 lb ground beef
  • 2 tbsp fresh mint, chopped
  • 1 garlic clove, minced
  • 1/4 cup breadcrumbs
  • 1 egg
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tbsp olive oil
  • Salad:
  • 2 cups arugula
  • 4 radishes, thinly sliced
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt & pepper

How to Make It

  1. Mix beef, mint, garlic, breadcrumbs, egg, salt, and pepper. Form into 12 meatballs.
  2. Heat olive oil in a skillet over medium. Cook meatballs 8-10 min, turning, until browned and cooked through.
  3. Toss arugula and radishes with olive oil, lemon juice, salt, and pepper.
  4. Serve meatballs hot with salad on the side.
