Ingredients

  • 1 lb chicken breast, sliced
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 2 tbsp olive oil
  • 1/2 cup heavy cream
  • 3 tbsp basil pesto
  • 1 garlic clove, minced
  • 1/2 tsp salt
  • 1/4 tsp pepper

How to Make It

  1. Heat olive oil in a skillet over medium-high. Cook chicken 5-6 min until golden. Remove.
  2. Sauté garlic 1 min, add cream, pesto, salt, and pepper. Stir until smooth.
  3. Add tomatoes and spinach, cook 2-3 min until spinach wilts. Return chicken, cook 2 min.
  4. Serve hot.
