Ingredients

  • 1 lb chicken breast (boneless, skinless)
  • 1 cup quinoa, rinsed
  • 2 cups chicken broth or water
  • 2 tbsp olive oil
  • Juice & zest of 1 lemon (~3 tbsp juice)
  • 1 tsp dried oregano
  • 1 tsp fresh parsley, chopped
  • 1/2 tsp salt
  • 1/4 tsp pepper

How to Make It

  1. Mix 1 tbsp olive oil, lemon juice, zest, oregano, salt, and pepper. Marinate chicken for 10 min.
  2. Cook quinoa in broth per package (15 min). Fluff with fork.
  3. Preheat grill to medium-high. Grill chicken 6-8 min per side until 165°F (74°C).
  4. Slice chicken, mix with quinoa, drizzle remaining 1 tbsp oil, and sprinkle parsley. Serve warm.
