Ingredients
- 1 lb chicken breast (boneless, skinless)
- 1 cup quinoa, rinsed
- 2 cups chicken broth or water
- 2 tbsp olive oil
- Juice & zest of 1 lemon (~3 tbsp juice)
- 1 tsp dried oregano
- 1 tsp fresh parsley, chopped
- 1/2 tsp salt
- 1/4 tsp pepper
How to Make It
- Mix 1 tbsp olive oil, lemon juice, zest, oregano, salt, and pepper. Marinate chicken for 10 min.
- Cook quinoa in broth per package (15 min). Fluff with fork.
- Preheat grill to medium-high. Grill chicken 6-8 min per side until 165°F (74°C).
- Slice chicken, mix with quinoa, drizzle remaining 1 tbsp oil, and sprinkle parsley. Serve warm.
