Ingredients

  • 4 salmon fillets (4-6 oz each)
  • 1 bunch asparagus, trimmed
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • Juice & zest of 1 lemon (~3 tbsp juice)
  • 1 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp pepper

How to Make It

  1. Preheat oven to 400°F (200°C). Line a baking sheet with foil.
  2. Toss asparagus with 1 tbsp olive oil, salt, and pepper. Arrange on half the sheet.
  3. Brush salmon with remaining 1 tbsp oil, season with salt and pepper. Place on the other half.
  4. Bake 12-15 min until salmon flakes and asparagus is tender.
  5. Whisk garlic, lemon juice, zest, and mustard for dressing. Drizzle over salmon and asparagus. Serve warm.
