Ingredients
- 4 salmon fillets (4-6 oz each)
- 1 bunch asparagus, trimmed
- 2 tbsp olive oil
- 2 garlic cloves, minced
- Juice & zest of 1 lemon (~3 tbsp juice)
- 1 tsp Dijon mustard
- 1/2 tsp salt
- 1/4 tsp pepper
How to Make It
- Preheat oven to 400°F (200°C). Line a baking sheet with foil.
- Toss asparagus with 1 tbsp olive oil, salt, and pepper. Arrange on half the sheet.
- Brush salmon with remaining 1 tbsp oil, season with salt and pepper. Place on the other half.
- Bake 12-15 min until salmon flakes and asparagus is tender.
- Whisk garlic, lemon juice, zest, and mustard for dressing. Drizzle over salmon and asparagus. Serve warm.
