Ingredients

  • Steak:
  • 1 lb flank or sirloin steak
  • 2 tbsp olive oil
  • Juice & zest of 1 orange (~1/4 cup juice)
  • Juice of 1 lemon (~3 tbsp)
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • Salsa:
  • 1 bunch asparagus, blanched & diced
  • 1 cup cherry tomatoes, halved
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/4 tsp salt
  • 1/8 tsp pepper

How to Make It

  1. Mix 2 tbsp olive oil, orange juice, zest, lemon juice, rosemary, thyme, salt, and pepper. Marinate steak for 15 min.
  2. Preheat grill to medium-high. Grill steak 4-5 min per side for medium-rare (135°F/57°C). Let rest 5 min, slice.
  3. For salsa, blanch asparagus 2 min, cool, dice. Mix with tomatoes, 1 tbsp oil, lemon juice, salt, and pepper.
  4. Serve steak topped with salsa.
