Ingredients

  • 1 lb chicken breast, cubed
  • 1 cup corn kernels (fresh or frozen)
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • Juice of 1 lime (~2 tbsp)
  • 1 garlic clove, minced
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • Optional: cilantro

How to Make It

  1. Heat olive oil in a skillet over medium-high. Cook chicken 5-6 minutes until golden. Remove.
  2. Sauté corn 3-4 minutes until tender.
  3. Return chicken, add chili powder, lime juice, garlic, salt, and pepper. Cook 1 minute.
  4. Serve hot, garnished with cilantro if desired.
