Ingredients

  • 4 bell peppers (any color), tops off, seeded
  • 1 lb ground beef
  • 2 cups fresh spinach, chopped
  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • 1 tbsp olive oil
  • 1/2 cup shredded mozzarella
  • 1/2 tsp salt
  • 1/4 tsp pepper

How to Make It

  1. Preheat oven to 375°F (190°C). Place peppers in a baking dish.
  2. Heat olive oil in a skillet over medium. Cook beef 5-6 min until browned. Add garlic, spinach, oregano, salt, and pepper; cook 2-3 min until spinach wilts.
  3. Stuff peppers with beef mixture, top with mozzarella.
  4. Bake 25-30 min until peppers are tender. Serve hot.
