Ingredients
- Steak:
- 1 lb flank or sirloin steak
- 2 tbsp olive oil
- Juice & zest of 1 orange (~1/4 cup juice)
- Juice of 1 lemon (~3 tbsp)
- 1 tsp dried rosemary
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp pepper
- Salsa:
- 1 bunch asparagus, blanched & diced
- 1 cup cherry tomatoes, halved
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1/4 tsp salt
- 1/8 tsp pepper
How to Make It
- Mix 2 tbsp olive oil, orange juice, zest, lemon juice, rosemary, thyme, salt, and pepper. Marinate steak for 15 min.
- Preheat grill to medium-high. Grill steak 4-5 min per side for medium-rare (135°F/57°C). Let rest 5 min, slice.
- For salsa, blanch asparagus 2 min, cool, dice. Mix with tomatoes, 1 tbsp oil, lemon juice, salt, and pepper.
- Serve steak topped with salsa.
