Ingredients

  • 1 lb pork tenderloin, sliced thin
  • 1 cup fresh spring peas (or frozen)
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tsp dried thyme (or 1 tbsp fresh)
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • Optional: lemon zest

How to Make It

  1. Heat olive oil in a skillet over medium-high. Cook pork slices 3-4 minutes per side until golden. Remove.
  2. Sauté peas 3-4 minutes until tender.
  3. Return pork, add garlic, thyme, salt, and pepper. Cook 1-2 minutes.
  4. Serve hot, with lemon zest if desired.
