Ingredients

  • Lamb Chops:
  • 8 lamb chops (about 1 lb)
  • 2 tbsp olive oil
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1 garlic clove, minced
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • Mint Pesto:
  • 1 cup fresh mint leaves
  • 1/4 cup olive oil
  • 2 tbsp almonds or pine nuts
  • 1 garlic clove
  • 1 tbsp lemon juice
  • Salt & pepper

How to Make It

  1. Mix 2 tbsp olive oil, rosemary, thyme, garlic, salt, and pepper. Rub onto lamb chops.
  2. Preheat grill to medium-high. Grill chops 3-4 min per side for medium (135°F/57°C).
  3. Blend mint, 1/4 cup olive oil, nuts, garlic, lemon juice, salt, and pepper until smooth.
  4. Serve chops hot with mint pesto drizzled or on the side.
